Foodie Friday: Crockpot Southwest Chicken

This has got to be one of the easiest recipes ever.  Seriously.  Crockpot recipes tend to be easy anyway, but this one really is a dump-it-all-in-and-turn-it-on type of deal.  It’s delicious to boot!

Crockpot Southwest Chicken

4 boneless chicken breasts {they can be frozen}

15 ounce can black beans

15 ounce can corn

15 ounce jar salsa

8 ounce brick cream cheese

Onion powder

Garlic powder

Salt

Pepper

Place chicken breasts in crockpot and cover with black beans, corn, and salsa. 

Sprinkle onion powder, garlic powder, salt, and pepper to taste.

Cook on low for 8-10 hours; high for 4-5 hours.

During last 30 minutes of cook time, add cream cheese to top.  After 30 minutes, stir to combine.  {The chicken will break up into smaller pieces, and it will all be one yummy concoction.}

Serve over rice.

Delayed Decision Making

As some of you know, I’ve been working on our new routine, workboxes, and getting organized.  Now, I like to think of myself as an organized person.  However, I’m a perfectionist and a procrastinator, and that can be a lethal combination.

I’ve been visiting Organized Home, and bought Cynthia’s book, Houseworks {it’s only about $12 on Amazon}.  Let me tell you, I love, love, love this book!  She outlines practical, short, sweet solutions for creating a clutter free, organized, efficient, functional home.  And I’ve only read about fifty pages…

In a short time, I have realized that I’ve been “organizing” the house, but it has not been done in a functional manner.  Simply put, it doesn’t work for me, and if it doesn’t work for me, it can’t possibly work for my family.  Cynthia outlines cutting clutter, effective and efficient cleaning, household organization {lists, anyone?}, and tons of other information.

So far, the part of the book that has resonated with me most is a part that states something to the effect of clutter is caused by delayed decision making.  I really thought about this, and monitored my actions over the next day, and this is so true!  Mail that is opened but not filed or placed in the “needs attention” pile, dishes not put away, clothes not folded, etc.  All a result of my inability to just decide right then and there what needs to be done to finish that task {put the mail away, put the dishes away, fold the clothes}.

What I also like about Cynthia’s book is her belief that you don’t buy stuff to organize and de-clutter.  You treat the problem, do the hard work, and then, if necessary, buy stuff.  This way, you know exactly what you need, what size, shape, place for it, etc.

Finally, Cynthia gives you permission to have a spot to have a little clutter.  I don’t know about you, but I can’t handle always putting something away.  The key here is this one spot always acts as the small clutter gathering spot, so clutter doesn’t spread.  It might be a chair in your room where you can lay a few clothes or a {not} junk drawer {sectioned off by a draw organizer of course}.  The bottom line is it allows you to be a slob sometimes, and then be able to go to your clutter resting place and put the items away later.

I am so thankful to have found Cynthia’s site and am looking forward to incorporating it into our daily routine.  Oh, did I mention she even addresses homeschooling organization?
