At any rate, I am so happy to share our summer recipe with you guys!

Babydoll and I both love citrus desserts, and lemon icebox pie is one of our favorites.  Different versions are available, but Babydoll and I use a no-bake one, because really, who wants to turn the oven on?

This recipe is adapted from an Emeril Lagasse recipe.

Lemon Icebox Pie

1 (8-ounce) package of cream cheese

1 (14-ounce) can sweetened condensed milk

1/2 to 1 cup fresh lemon juice

1 to 3 tablespoons lemon zest

1 teaspoon vanilla bean paste

1 prepared graham cracker crust

Combine first five ingredients in a bowl and mix till smooth.  Pour into pie crust.  Refrigerate overnight.

The reason the lemon ingredients are not set amounts is because I like really really tart pie and Babydoll likes kind of tart pie.  Pretty much you can use any amount of juice and zest you want.

Also, if you want a completely yellow pie, use vanilla extract instead of the paste.  I just prefer the taste of the paste.

You can also use lime juice instead of lemon juice, but you’ll have to play around with the amounts as lime juice tastes different than lemon juice.
